ROASTED PEPPER AND SWEET PLANTAIN SANDWICH
1 Slice Dark Rye Bread
1 Tablespoon Olive Oil
1 Roasted Pepper
1 Sweet Plantain
1 Tablespoon Vegan Mayo
1 Clove Garlic
Heat the oil in a pan and add sliced sweet plantain. Fry for couple of minutes then flip it over and fry for another few minutes until golden.
To make guacamole add crushed avocado, fine chopped tomato and coriander in to a bowl and mix everything together. Add salt and fresh lemon juice in to the mix.
Mix crushed garlic with mayo and add salt if needed.
On a toasted bread spread mayo and garlic mix, guacamole then sliced roasted pepper and sweet plantain.
