1 Tablespoon Olive Oil

1 Tablespoon Ground Flaxseed

1 Cup Flour 

1/2 Cup Polenta 

1 Red Pepper 

1 Onion 

1 Cup Sweetcorn

1 Tablespoon Baking Powder

1 Tablespoon Smoked Paprika 

1 Cup Oat Milk

Pinch of Salt and Pepper

Fresh Coriander

3 Tablespoons Nutritional Yeast 



Mix together the ground flaxseed and the water in a small bowl and set aside to go gloopy.

Heat olive oil in a pan and fry chopped onions and peppers. 

Place all dry ingredients in to a bowl and whisk it to combine. 

Add fried onions, peppers, sweetcorn, chopped coriander, flaxseed mix and oat milk in to a bawl and stir until no lumps of flour remain. 

Place a frying pan over a low heat and add a little olive oil. Scoop about 1/3 cup of the batter into the pan and spread it out slightly. 

Fry for couple of minutes until starts to set around edges then flip it and fry for another few minutes. 

Serve with guacamole or sweet chilli sauce.
