VEG CHILLI

INGREDIENTS 

1 Tablespoon Olive Oil

1 Onion 

1 Red Pepper

1 Carrot

1 Small Sweet Potato

1 Can Kidney Beans

2 Tomatoes

1 Can Chopped Tomatoes

2 Cups Veg Stock

1 Tablespoon Tomato Puree 

1 Tablespoon Vegan Worcester Sauce

1 Tablespoon Smoked Paprika

1 Tablespoon Crushed Chillies 

Salt and Pepper 

Fresh Coriander 

METHOD

In a large frying pan add chopped onion, pepper, carrot, sweet potato, fresh tomatoes and fry for few minutes.

After few minutes add veg stock, chopped tomatoes from a can and all spices, Worcester sauce, tomato pure following with salt and pepper. 

Simmer for 25 minutes. 

Add Kidney beans and simmer for another 10 minutes. 

After it's cooked sprinkle with chopped fresh coriander. 

Serve with basmati rice and guacamole.
